1 1/2 cup coffee
1 tablespoon marsala wine
1 tablespoon sugar
6 egg yolks
3/4 cup sugar
500g mascarpone cheese
400g pure cream
3 egg whites
24 ladyfingers
cocoa powder for dusting

Mix coffee, sugar and marsala wine until sugar has dissolved.

Whip cream to soft peaks and chill in the refrigerator.
In a large bowl, set over a pan of simmering water, whisk the egg yolks and sugar unitil the mixture has doubled and holds a ribbon fall from the whisk about 5 minutes, and remove from heat. Add the mascarpone cheese and mix until smooth and creamy.
In a mixing bowl, whisk the egg whites until stiff peaks form.
Using a rubber spatula, fold the cream into the mascarpone mixture until blended well, and then gently fold the egg white mixture.
To Assemble, dip ladyfingers in the coffee mixture, just for a moment, to let it soak up the coffee (but not get soggy). Line the bottom of a casserole or baking dish with the 12 soaked ladyfingers.
Spread a half of the mascarpone mixture over the ladyfingers and dust with cocoa powder. Sork the remaining ladyfingers and arrange another layer over the mascarpone cream, then spread the remaining mascarpone mixture over the second layer of ladyfingers.
Cover and refrigerate for at least 6 hours. Dust with cocoa powder before serving.
