Baked Cheesecake



今回はベイクドチーズケーキを四角い型で焼いて、一口サイズに切り分けてみました。ちょっとだけ食べたい時にいいかな、と。

でも、ついつい何切れも食べてしまって…。ぜんぜん意味ないじゃん。

[Base]
120g biscuits(Arnott's Nice)
50g butter, melted

[Filling]
250g cream cheese, softened
70g caster sugar
1 egg
100ml light sour cream
1 tablespoon plain flour

White Chocolate Macadamia Cookie



やわらかくてしっとりしたSubwayタイプのクッキーです。大きいので一枚で十分満足。

あんまり焼きすぎないように気をつけないと、固くなって普通のクッキーになっちゃいますのでご注意を。
低めの温度で様子を見ながら焼くのがいいようです。

145g plain flour
1/2 teaspoon baking soda
110g butter
60g sugar
70g brown sugar
1 egg
100g white chocolate chip
100g macadamia nuts

Makes approximately 16 cookies

Preheat oven to 160°C.

In a bowl, mix softened butter, sugar and brown sugar with an electric mixer.

Add the egg and mix well.

Fold sifted flour and baking soda with a spatula into the mixture. Add the chocolate chips and roasted macadamia nuts.

Using a tablespoon, drop the cookie dough 5 cm apart on ungreased baking. Bake in the oven for 15 - 20 minutes.

Remove from oven and let cookies cool on baking sheet for about 5 minutes before removing the cookies to a wire rack to cool completely.

[Base]
1 cup self rasing flour, sifted
3/4 cup brown sugar
1/2 cup desiccated coconut
125g butter, melted

[Filling]
395g can sweetened condensed milk
2 tablespoons golden syrup
30g butter, melted

[Topping]
150g dark chocolate

(18cm x 28cm baking pan)

Preheat oven to 180ºC.
Combine plain flour, brown sugar and coconut in a large bowl, and add melted butter, and mix well. Press into a lined pan. Bake 15-20 minutes or until light brown. Cool.

In a small saucepan, place butter, condensed milk and syrup and stir over low heat until smooth.
Pour caramel mixture over the base, return to oven, bake for 10 minutes, and cool.

Melt the chocolate in a small bowl using microwave. Spread melted chocolate over caramel filling.

Allow to set in pan before turning out, cut to serve.
