Banana Cake
よーく熟したバナナで作る定番バナナケーキ。今回は正方形のラミントン用の型で焼きました。もちろんパウンドケーキ型で焼いてもOKです。
チョコチップやクルミを入れてマフィン型で焼けば、チョコバナナマフィンになります。チョコチップを入れる時は少しお砂糖を少なめにしてもいいかも。

125g butter, softened
125g sugar
2 eggs
2 bananas(250g)
175g self rasing flour
1/4 teaspoon baking soda
50ml milk
sliced almond

(20cm x 20cm baking pan)
Preheat oven to 180°C.
Line the baking pan with baking paper.
In a large bowl, beat softened butter and sugar and eggs with an electric mixer until well mixed. Spred mixture in to pan with a rubber spatula.
Place blueberries on top.
Bake 15 - 20 minutes.
Cool complettely in pan and cut into pieces.

1/3 cup sugar
2 eggs
1 1/4 cups almond meal
2 tablespoons plain flour
400g can blueberry, drained

Makes 12 pieces
(17cm x 28cm baking pan)
Preheat oven to 180°C.
Line the baking pan with baking paper.

125g dark chocolate
125g butter
3 egg whites
3 egg yolks
100g sugar
50g plain flour
icing sugar

Set oven to 220℃.
Grease a 20cm round cake tin.
Place the chocolate and the butter into a bowl and set this over a pan of hot water on a low heat.
Stir with a spatula until smooth then remove from the heat. Mix the egg yolks.
In a medium bowl, whisk the egg whites and sugar until the mixture is stiff.
Fold in half the egg white mixture into the chocolate mixture. Repeat with the rest of the mixture.
Shift in the flour and mix gently.
Turn the mixture into prepared tin and bake in the oven for 10 minutes and turn down to 170℃ for 15 minutes.
